To the pantry I went first last night, and then the freezer in the garage… with bare feet and a tea in hand, stressing silently in my hope that the baby sleeps long enough that I can finish this task.
My items of choice to work from this week are:
Frozen chicken breasts
1 bag of frozen perogies
Chicken drumsticks (leftover from last week that I never ended up using!)
Apples
Ripe bananas
Whole wheat flour
3/4 dozen eggs
Rice
Potatoes
Apple cider vinegar
Olive oil
Chicken Broth
Everything in the picture above was purchased for $63.44 at Save-On Foods.
The 2 kg of organic rolled oats from the bulk section were just $4.50!!!! I know, your mind is spinning too π
Items from Safeway, not pictured with the rest of the groceries above:
1 x 4kg box of frozen chicken breasts ($26.20)
1 x 250g container of 14% sour cream ($1.49)
1 bag of powdered milk ($5.79)
= $96.92 (saving the change in case I need something I’m forgetting here…like a can of diced tomatoes, dang it…)
My menu this week is as follows:
Saturday
Breakfast: Spinach Egg Frittata w/ homemade hashbrowns & sliced oranges
Lunch: Sandwiches
Dinner: Perogies & Ukrainian Sausage w/ Chickpea Kale Salad and Homemade dressing
Sunday
Breakfast: Leftover Frittata w/ Toast & Greek Vanilla Yogurt
Lunch: Leftover Perogi Supper with Salad OR Sandwiches
Dinner: Coconut Chicken Curry w/ basmati rice and frozen peas
Monday
Breakfast: Matcha Vanilla Overnight Oats (S)/Apple Oat muffins + hard-boiled eggs
Lunch: Chickpea Kale Salad w/ Shredded chicken breast (S)/ Leftover CC Chicken
Dinner: Pork Shoulder Steaks + Leftover Rice + Roasted veggies
Tuesday
Breakfast: Matcha Vanilla Overnight Oats (S)/Apple Oat muffins + hard-boiled eggs
Lunch: Chickpea Kale Salad w/ Shredded chicken breast (S)/ Leftover Dinner
Dinner: Chili Mac & Cheese + Salad and Homemade Dressing
Wednesday
Breakfast: Matcha Vanilla Overnight Oats (S)/Apple Oat muffins + hard-boiled eggs
Lunch: Chickpea Kale Salad w/ Shredded chicken breast (S)/ Leftovers
Dinner: BBQ Chicken Drumsticks + mashed potatoes + frozen asparagus
Thursday
Breakfast: Matcha Vanilla Overnight Oats (S)/Apple Oat muffins + hard-boiled eggs
Lunch: Chickpea Kale Salad w/ Shredded chicken breast (S)/ Sandwiches
Dinner: Chicken Vegetable soup w/ Artisan Bread
Friday
Breakfast: Matcha Vanilla Overnight Oats (S)/Apple Oat muffins + hard-boiled eggs
Lunch: Chickpea Kale Salad w/ Shredded chicken breast (S)/ Leftover Drumstick meal
Dinner: Beef Nacho’s with Guacamole & Salsa
Snacks this week:
- Apple or Banana Oat Muffins
- Laughing cow cheese
- Fruit2Go’s and a couple squeeze packs
- Raw peppers and celery + hummus (from the freezer)
- cold chicken salad (for sandwiches)
- hazelnut chocolate bars (a couple squares a day never hurt anybody)
Some additional thoughts…
If you didn’t already notice…there’s no bread in these first two grocery hauls! That’s because we have a borrowed bread machine (thank you Pat <3) that we are using this week…hence the purchase of molasses and powdered milk. I also, perhaps over-ambitiously, believe I will attempt to make my own rosemary crackers this week to go with hummus.
I also make my own salad dressing and store in the IKEA Korken bottles, using olive oil, apple cider vinegar, dijon mustard, and a variety of spices…so we don’t spend money on pre-bottled stuff anymore.
On Sunday, I do a crockpot of 4 frozen chicken breasts, cooked on high for 3-4 hours, and voila! Shredded chicken for days for my salads and cold chicken salad.
Also…the ‘artisan bread’ I make is only 4 ingredients, rises overnight, and only takes 45 minutes to bake in the oven! It’s on Pinterest, and it will change your life.
I had a few carry-over items this week from last….there was so much chili last week, and we were invited over to my parents for dinner, so those things change the eating schedule a bit (in a good way).
If there’s anything you’d like me to add in these posts (recipes etc.) let me know! I was thinking of adding pictures of what a day of these meals looks like so that you can have a visual idea of just how much food can be made from a really simple menu like this.

I really like your blog. Your meals plans seem like they are carefully planned and it’s amazing how much food can come from these simple meals. It would be nice to see pictures and some recipes like the coconut chicken curry.

I love the menu on your blog! I have tried to do meal plans but never keep up with it and the dry erase boards always get doodled on and erased. I might give this a try. Shopping from my pantry is my new favorite thing to do but I haven’t been making out a list of what I have. I love seeing what others do to get ideas for myself π
